Slow Cooker Creamy Tuscan Pasta is a rich, creamy, and flavorful dish made effortlessly in your slow cooker with sun-dried tomatoes, spinach, and Parmesan cheese, perfect for weeknight dinners or special occasions.

Ingredients

12 oz penne pasta

1 cup heavy cream

1 cup chicken broth

1 cup sun-dried tomatoes, chopped

2 cups fresh spinach

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil, for garnish

Instructions

  1. In the slow cooker, combine the heavy cream, chicken broth, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
  2. Add the uncooked penne pasta and stir to combine. Ensure that the pasta is fully submerged in the liquid.
  3. Cover and cook on low for 2-3 hours, or until the pasta reaches your desired texture.
  4. Stir in the fresh spinach and Parmesan cheese, allowing the spinach to wilt and the cheese to melt.
  5. Serve hot, garnished with fresh basil.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat by adding a splash of cream or chicken broth to loosen the sauce.
  • Frozen spinach can be used, just thaw and drain before adding to the slow cooker.
  • For a thicker sauce, add a tablespoon of cornstarch mixed with water towards the end of cooking.
  • This dish can be made ahead of time and reheated when ready to serve.
