Shrimp scampi is a delicious and easy-to-make dish featuring juicy shrimp in a flavorful garlic butter sauce. Ingredients

  • 4 tablespoons unsalted butter, divided
  • 1 tablespoon extra virgin olive oil
  • 1 shallot, minced (about 3 tablespoons)
  • 3 garlic cloves, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1 pound extra-large shrimp, peeled and deveined with tails intact
  • 1/2 cup dry white wine
  • Zest from 1 lemon
  • 2 teaspoons minced parsley
  • Salt and pepper to taste

Instructions

  • Heat a large skillet over medium heat. Melt 2 tablespoons of butter with olive oil.
  • Add minced shallots, garlic, and red pepper flakes. Sauté for 2-3 minutes until fragrant.
  • Add shrimp and cook for 3 minutes or until pink. Season with salt and pepper.
  • Transfer shrimp to a plate and set aside.
  • Pour wine into the skillet and simmer for 1 minute.
  • Melt the remaining butter and return the shrimp to the skillet. Cook for another 2-3 minutes until shrimp are fully cooked.
  • Season with salt and pepper. Remove from heat and top with parsley and lemon zest before serving.

Notes

  • Spice it up by adding more red pepper flakes or omit for a milder flavor.
  • Use tarragon or chives in place of parsley for a variation in herbs.
  • Add spinach leaves just before finishing for a healthy addition.
