Ingredients

7 Small Red Potatoes (or 2-3 russet potatoes)

4-7 Bratwurst (or Italian sausage)

1 Bell Pepper (any color)

Baby Carrots (optional, you can add extra veggies)

2-3 Tablespoons Olive Oil

1 Tablespoon Chopped Onion (raw or powder)

1 Tablespoon Garlic (fresh or minced)

Salt to taste

Instructions

  • Preheat the oven to 400°F (200°C).

  • Line a sheet pan with parchment paper or foil.

  • Slice the potatoes and chop the bell pepper. If you’re using any additional veggies like carrots or zucchini, chop them as well.

  • Place the sliced potatoes and chopped veggies on the sheet pan.

  • Drizzle olive oil over the veggies, then sprinkle with salt, garlic, and chopped onion. Toss to combine.

  • Arrange the bratwurst on the pan, placing them in between the vegetables.

  • Bake for 40-50 minutes, or until the potatoes are golden and crispy, and the bratwurst are cooked through.

  • For extra flavor, you can experiment with different seasonings like paprika, rosemary, or garlic powder.

  • You can use any type of potatoes, including russet or Yukon Gold, but red potatoes are ideal for this recipe.
