Ingredients
1 lb scallops
1 Tbsp kosher salt
12 oz pasta (such as spaghetti or linguine)
3 Tbsp extra virgin olive oil
12 shrimp (peeled, deveined)
3 cloves garlic (minced)
1 Tbsp fresh parsley (chopped)
¼ tsp black pepper
3 oz butter
⅓ cup dry white wine
4 wedges lemon (for serving)
Instructions
Prepare Scallops – Soak in a brine for 10 minutes, then pat dry.
Cook Pasta – Boil in salted water; set timer for 7 minutes.
Sear Seafood – Heat olive oil in a pan, sear scallops for 1.5 minutes. Add shrimp, garlic, and parsley. Cook for 2 more minutes.
Make the Sauce – Deglaze with white wine, scraping the pan. Reduce, then stir in butter until melted.
Combine – Toss pasta with the seafood sauce, adding pasta water if needed.
