Salt

Garlic powder

Onion powder

Unsalted butter, cold and cubed

Buttermilk

For the Filling:

Thinly sliced roast beef (deli-style or leftover)

Shredded provolone or mozzarella cheese

Worcestershire sauce

Butter (optional, for sautéing beef)

For the Au Jus Dipping Sauce:

Beef broth

Worcestershire sauce

Garlic powder

Onion powder

Soy sauce (optional, for extra depth)

Salt & pepper to taste

Instructions

  • Prepare the Biscuit Dough:
In a large mixing bowl, whisk together the dry ingredients. Cut in the cold butter until the mixture resembles coarse crumbs. Slowly add buttermilk, stirring until just combined.

  • Roll Out and Fill the Biscuits:
On a floured surface, gently knead the dough a few times, then roll it out to about ½ inch thickness. Cut into even circles. Place half of the rounds on a baking sheet, layer with roast beef, cheese, and a dash of Worcestershire sauce. Top with remaining rounds and seal the edges.

  • Bake the Biscuits:
Preheat the oven to 400°F (200°C). Brush the tops with buttermilk or melted butter. Bake for 15-18 minutes until golden brown.

  • Prepare the Au Jus Dipping Sauce:
While the biscuits bake, combine all sauce ingredients in a saucepan. Simmer over medium heat for 5-7 minutes, adjusting seasoning as needed.

  • Serve and Enjoy:
Let the biscuits cool slightly before serving warm with the au jus dipping sauce.

Notes

  • For a vegetarian option, sauté mushrooms or use a meat substitute.

  • To make bite-sized versions, use smaller biscuit cutters.

  • Use garlic butter to brush over the biscuits after baking for added flavor.

  • Can be made ahead and stored in the refrigerator for up to 3 days. Reheat in the oven to maintain texture.
