This Sausage Potato Soup is a hearty and creamy comfort food made with spicy Italian sausage, tender potatoes, carrots, and fresh spinach. It’s an easy, one-pot meal perfect for weeknight dinners or cozy family gatherings. The spicy sausage and creamy broth combine for a filling dish that is sure to satisfy.

Ingredients

1 lb crumbled Italian sausage (spicy or mild)

1 large onion, chopped

2 garlic cloves, minced

1 teaspoon Italian seasoning

1/2 teaspoon paprika

1/4 teaspoon red pepper flakes (optional)

2 tablespoons tomato paste

4 cups chicken broth

3 large red or yellow potatoes, peeled and cubed

2 medium carrots, diced

2 cups fresh spinach

1 cup heavy cream

Fresh thyme or parsley, chopped for garnish

Salt and pepper to taste

Instructions

  1. In a large saucepan, cook the crumbled sausage with the chopped onion and garlic over medium heat for 7-10 minutes until the sausage is browned.

  2. Drain any excess fat and stir in the Italian seasoning, paprika, red pepper flakes, and tomato paste.

  3. Add the chicken broth, stir well to dissolve the tomato paste, and bring to a boil.

  4. Add the cubed potatoes and diced carrots. Reduce the heat and simmer uncovered for 15-25 minutes until the potatoes are fork-tender.

  5. Stir in the fresh spinach and cook for another 2-3 minutes until the spinach wilts.

  6. Pour in the heavy cream and season with salt and pepper to taste. Garnish with fresh thyme or parsley before serving.

Notes

  • You can substitute the Italian sausage with turkey or chicken sausage for a lighter version.

  • For a dairy-free option, use coconut milk instead of heavy cream.

  • If you don’t have spinach, kale or Swiss chard can be used instead.

  • For a smoother texture, try using Yukon Gold potatoes.

  • Freeze the soup without the cream for up to 3 months. Add the cream when reheating.
