Ingredients

1 lb smoked sausage, sliced into 1/4-inch rounds

1 large green bell pepper, sliced

1 medium yellow bell pepper, sliced (optional)

1 large yellow onion, sliced

2 tablespoons olive oil or butter

1 teaspoon garlic powder

1 teaspoon black pepper

1/2 teaspoon salt

1 teaspoon Cajun seasoning (optional)

2 cups cooked white rice

Instructions

  1. In a large skillet, heat olive oil or butter over medium heat until hot.
  2. Add smoked sausage slices and cook for 4–5 minutes per side, until browned. Remove and set aside.
  3. Add the sliced onions and bell peppers to the skillet. Sauté for 6–8 minutes, or until softened and slightly charred.
  4. Return the sausage to the pan. Add garlic powder, black pepper, salt, and Cajun seasoning. Stir well to combine.
  5. Cook everything together for another 2–3 minutes to let the flavors meld. Serve hot over white rice.
