Ingredients

1 pound Italian sausage (either mild or spicy)

1 tablespoon olive oil

3 cloves garlic, minced

1/2 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

8 ounces fettuccine or your choice of pasta

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sausage and cook, breaking it apart with a spoon, until browned and fully cooked, about 5-7 minutes.
  3. Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Pour in the chicken broth and bring to a simmer. Add the heavy cream, stirring to combine, and let the sauce simmer for 3-4 minutes.
  4. Stir in the Parmesan cheese, and cook the sauce until it thickens to your desired consistency, about 3-5 minutes. Season with salt and pepper to taste.
  5. Add the cooked pasta to the sauce and sausage mixture, tossing to coat evenly. Cook for another 1-2 minutes until everything is heated through.
  6. Garnish with freshly chopped parsley and serve immediately.

Notes

  • If you prefer a different meat, you can substitute the sausage with chicken, or ground beef.
  • For a spicy kick, use spicy Italian sausage or add red pepper flakes to give the dish a little heat.
  • For a vegetarian option, skip the sausage and use mushrooms or other vegetables like spinach.
  • While fettuccine is classic for Alfredo, you can use other pasta types like penne, rigatoni, or spaghetti.
  • Try adding mozzarella or Asiago cheese for a different flavor profile in the sauce.
