A refreshing and easy-to-make apple salad with a perfect balance of sweet, tangy, and creamy flavors. This copycat recipe from Ruby Tuesday features crisp apples, crunchy pecans, and tangy cranberries, all tossed in a creamy dressing.

Ingredients

1/2 cup sour cream

1/2 cup mayonnaise

1/4 cup granulated sugar

1 1/2 teaspoons lemon juice

1 Granny Smith apple

1 gala or Fuji apple

1/2 cup dried cranberries

1/3 cup pecans

1/4 cup celery

Butterhead lettuce leaves for serving

Instructions

  1. In a small mixing bowl, whisk together the sour cream, mayonnaise, sugar, and lemon juice. Cover and refrigerate until the salad is ready to be assembled.
  2. Rinse and dice the celery and set aside.
  3. Chop the pecans into smaller pieces and set aside.
  4. Rinse and dice the Granny Smith apple, then set aside.
  5. Rinse and dice the Fuji or Gala apple, and set aside.
  6. In a large salad bowl, combine all the prepared ingredients (apples, celery, cranberries, and pecans).
  7. Remove the dressing from the fridge and pour it over the salad ingredients.
  8. Toss everything together gently until the dressing evenly coats the salad.
  9. Serve the salad on a bed of butterhead lettuce leaves for an extra touch of freshness.

  • For a heartier version, add grilled chicken or turkey breast.
