Roasted Garlic Bread Dip

A savory and indulgent appetizer featuring roasted garlic, melted cheeses, and fresh herbs. This creamy dip is perfect for gatherings and can be paired with chips, crackers, or veggies.

Ingredients

3 heads garlic

1 tsp olive oil

1 8 oz cream cheese, softened

1.5 c mozzarella cheese, hand shredded

1/2 c parmesan cheese

1/4 c fresh parsley, chopped

1/4 c mayonnaise

Salt and pepper to taste

1-2 tbs garlic powder

Instructions

  1. Cut off the top of the garlic heads and place them in the center of a large piece of aluminum foil.
  2. Lightly drizzle with olive oil and season with salt and pepper.
  3. Loosely wrap the foil around the garlic heads and roast in a preheated 375°F oven for 1 hour.
  4. Let the garlic cool, then squeeze out the roasted garlic cloves.
  5. In a medium-sized bowl, combine cream cheese, mozzarella, parmesan, mayonnaise, garlic powder, and roasted garlic cloves. Reserve 1/2 cup mozzarella for topping.
  6. Mix all ingredients until evenly combined.
  7. Transfer the mixture to a baking dish and spread evenly.
  8. Top with reserved mozzarella and bake uncovered until the cheese is melted and the sides are bubbly (15-20 minutes).
  9. Let cool slightly and garnish with chopped parsley.
  10. Serve with chips, crackers, or any dipper of your choice.

Notes

  • For a spicy variation, add crushed red pepper flakes or hot sauce to the dip before baking.
  • Herb swaps: basil, thyme, or rosemary work well in place of parsley.
  • You can store leftovers in the fridge for up to 3 days or freeze before baking for up to 2 months.
  • Reheat in the oven at 350°F for 10-15 minutes or microwave individual servings for quicker reheating.
