Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cups Rice Krispies cereal

Instructions

  • Preheat & Prep: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream Butter & Sugar: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add Wet Ingredients: Mix in the eggs one at a time, ensuring each is well incorporated. Stir in the vanilla extract.
  • Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
  • Fold in Add-Ins: Gently fold in the chocolate chips and Rice Krispies cereal, being careful not to crush the cereal.
  • Shape & Bake: Scoop about 1 1/2 tablespoons of dough onto the baking sheet, spacing them 2 inches apart.
  • Bake: Bake for 10-12 minutes, or until the edges turn golden brown. The centers should remain slightly soft.
  • Cool & Enjoy: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Extra Crunch: Lightly toast the Rice Krispies before adding them to the dough.
  • Chocolate Choices: Swap semi-sweet chocolate chips for milk or dark chocolate chips.
  • Nutty Twist: Add chopped walnuts or pecans for extra texture and flavor.
