Ingredients

1 ribeye steak

Sea salt flakes

Freshly ground black pepper

50g butter

2 sprigs of thyme

1 clove of crushed garlic (with its skin)

Instructions

  • Take the ribeye steak out of the fridge 30 minutes before cooking to bring it to room temperature.

  • Season both sides of the steak generously with sea salt and black pepper.

  • Heat a frying pan over medium-high heat. Ensure the pan is large enough for the steak (or use two pans for more steaks).

  • Place the steak in the pan and cook for 2-3 minutes per side for a 3cm thick steak (about 5 minutes total). For different doneness, use a meat thermometer:

    • 50°C for rare

    • 60°C for medium

    • 70°C for well-done

  • Once flipped, add butter, thyme, and garlic to the pan. Tilt the pan and spoon the melted butter over the steak for about 1 minute.

  • Remove the steak and let it rest for 5 minutes before slicing into strips.

  • Season further if desired and serve with your choice of sides.

  • For added flavor, consider drizzling balsamic vinegar or red wine over the steak during cooking.

  • Experiment with different herbs like rosemary or sage for unique aromatics.
