Ingredients

1 pre-made pizza crust

1 cup rhubarb, chopped

1/4 cup powdered sugar

1/2 teaspoon lemon juice

Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine chopped rhubarb, granulated sugar, cornstarch, and vanilla extract. Stir until the rhubarb is evenly coated. Let it sit for about 10 minutes to release some juices.
