Ingredients

For the Dough:

  • 3 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 package (2 ¼ tsp) active dry yeast

  • ¾ cup warm milk (110°F/45°C)
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon vanilla extract

For the Filling:

  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • 2 tablespoons ground cinnamon
  • ¼ cup granulated sugar

For the Cream Cheese Icing:

  • 4 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
  • 1-2 tablespoons milk (optional, to thin icing)

Instructions

  • Prepare the Dough:

    • In a large bowl, mix warm milk, yeast, and 1 tablespoon of sugar. Let sit for 5 minutes until foamy.
    • Add melted butter, egg, vanilla extract, cocoa powder, remaining sugar, and red food coloring. Mix well.
    • Gradually add flour and salt, mixing until a soft dough forms. Knead for 5-7 minutes until smooth and elastic.
    • Place the dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours until doubled in size.
  • Prepare the Filling & Shape the Rolls:

    • Roll the dough out on a floured surface into a large rectangle.
    • Spread softened butter evenly over the dough.
    • In a small bowl, mix brown sugar, granulated sugar, and cinnamon. Sprinkle over the buttered dough.
    • Roll the dough tightly into a log and slice into 12 equal pieces. Place rolls in a greased baking dish and cover. Let rise for 30-45 minutes.
  • Bake the Rolls:

    • Preheat oven to 350°F (175°C).
    • Bake rolls for 20-25 minutes until golden brown.
  • Prepare the Cream Cheese Icing:

    • Beat together softened cream cheese, butter, powdered sugar, and vanilla extract. Add milk if needed for consistency.
  • Finish & Serve:

    • Let the rolls cool slightly before spreading the cream cheese icing on top.
