Ingredients

Soup Base:

  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Main Ingredients:

  • 1 package store-bought potstickers (about 2024 dumplings)
  • 2 cups baby spinach or bok choy, chopped
  • 1 cup sliced mushrooms (optional)
  • 1 cup shredded carrots

For Garnish:

  • Green onions, chopped
  • Sesame seeds
  • Sriracha or chili oil (optional)

Instructions

1️⃣ Sauté the Aromatics

  • Heat oil in a large pot over medium heat.
  • Add diced onion and sauté for 3–4 minutes until softened.
  • Stir in minced garlic and grated ginger, cooking for about 30 seconds until fragrant.

2️⃣ Build the Broth

  • Pour in the broth, water, soy sauce, and sesame oil.
  • Bring the mixture to a boil, then reduce heat and let it simmer for 5 minutes.

3️⃣ Cook the Potstickers

  • Gently drop in frozen potstickers and let them cook for 6–8 minutes until they float to the top.

4️⃣ Add the Vegetables

  • Stir in spinach (or bok choy), mushrooms, and shredded carrots.
  • Let cook for another 3–5 minutes until vegetables are tender.

5️⃣ Garnish and Serve

  • Ladle the soup into bowls.
  • Top with green onions, sesame seeds, and chili oil or sriracha if desired.
