1 cup pistachios
8 oz cream cheese
1/2 cup heavy cream
1/2 cup sugar
1/2 cup fresh raspberries
1 cup graham cracker crumbs
1/4 cup butter (melted)
1 tablespoon gelatin
Prepare the Crust: Combine graham cracker crumbs and melted butter. Press into the bottom of dome molds and refrigerate while preparing the filling.
Make the Pistachio Cheesecake Filling: Grind pistachios in a food processor. Beat cream cheese, sugar, and heavy cream until smooth, then add ground pistachios.
Add Gelatin: Dissolve gelatin in water, then incorporate into the cheesecake mixture to help it set.
Assemble the Domes: Spoon cheesecake mixture over the crusts. Add a dollop of raspberry puree to each dome and swirl gently.
Chill to Set: Refrigerate for at least 4 hours, or overnight for best results.
Unmold and Serve: Carefully remove the domes from the molds and top with fresh raspberries before serving.
If you don't have dome molds, you can use muffin tins or small bowls.
