This Pina Colada Fluff is a tropical dessert made with pineapple, coconut, and a hint of rum extract. Ingredients

3.4 oz vanilla instant pudding mix

20 oz crushed pineapple (do not drain)

8 oz Cool Whip (lite, thawed)

1 tsp rum extract

2 cups miniature marshmallows

1 cup shredded sweetened coconut

1/2 cup chopped nuts (optional)

Instructions

  • In a large bowl, combine the vanilla pudding mix with the entire can of crushed pineapple (with juice). Stir until the pudding mix is fully dissolved and well combined.

  • Gently fold in the Cool Whip, rum extract, marshmallows, shredded coconut, and chopped nuts (if using).

  • Refrigerate until ready to serve. Best chilled for a few hours before serving.
