A refreshing and light dessert combining tropical flavors like crushed pineapple, coconut, and marshmallows in a fluffy, creamy treat. Perfect for summer parties or anytime you want a tropical escape!

Ingredients

3.4 oz vanilla instant pudding mix (1 box)

20 oz crushed pineapple (1 can - do not drain!)

8 oz Cool Whip (1 container - thawed, lite version works great)

1 tsp rum extract

2 cups miniature marshmallows

1 cup shredded sweetened coconut

1/2 cup chopped nuts (your favorite variety)

Instructions

  1. In a large bowl, combine the vanilla instant pudding mix with the entire can of crushed pineapple (undrained).
  2. Stir the mixture until everything is fully combined.
  3. Gently fold in the Cool Whip, rum extract, marshmallows, shredded coconut, and chopped nuts.
  4. Chill the Pina Colada Fluff in the fridge until you're ready to serve. The longer it chills, the better the flavors meld together!

Notes

  • Can be made ahead of time for improved flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • If using fresh pineapple, finely chop and drain to avoid excess liquid.
