Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 large onion, chopped
  • 1 green bell pepper, chopped small
  • 1 cup shredded provolone cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper and cook until they’re softened and lightly caramelized, about 8-10 minutes. Remove from heat and set aside.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Add in the sautéed onions and peppers, along with the shredded provolone cheese. Mix everything together until well combined.
  4. Shape the meat mixture into a loaf and place it on a lined baking sheet or in a loaf pan.
  5. Sprinkle the shredded mozzarella cheese over the top of the meatloaf.
  6. Bake for 45-55 minutes or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
  7. Remove from the oven and let it rest for 10 minutes before slicing and serving.

Notes

  • Cheese Options: Swap the provolone for other melting cheeses like cheddar, American, or Swiss to change up the flavor.
  • Add Mushrooms: For an extra layer of flavor, add chopped mushrooms to the sautéed onions and bell peppers.
  • Spicy Kick: For a little heat, add diced jalapeños or hot sauce to the meat mixture.
  • Gluten-Free: Use gluten-free breadcrumbs or a gluten-free substitute to make this recipe gluten-free.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • Reheating: To reheat, place slices of meatloaf in the microwave for 1-2 minutes or heat in a 350°F (175°C) oven for 10-15 minutes until warmed through.
