Peanut Butter Lunch Lady Bars are nostalgic sheet pan desserts with a soft peanut butter base and warm, creamy peanut butter frosting. Ideal for crowds and perfect for make-ahead treats.

Ingredients

2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking soda

1 teaspoon salt

½ cup whole milk

1 teaspoon vanilla extract

2 large eggs, beaten

1 cup (2 sticks) unsalted butter

1 cup creamy peanut butter

½ cup (1 stick) unsalted butter (for frosting)

½ cup creamy peanut butter (for frosting)

2 tablespoons milk (for frosting)

4 cups powdered sugar (for frosting)

Instructions

  1. Preheat the oven to 400°F (200°C). Grease or line a 13×18-inch sheet pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt. Set aside.
  3. In another bowl, mix milk, vanilla extract, and beaten eggs.
  4. In a saucepan, melt butter and peanut butter over medium heat until it gently boils. Remove from heat.
  5. Stir dry ingredients into the melted mixture, then add milk and egg mixture. Mix until smooth.
  6. Spread batter evenly into the prepared pan and bake for 20 minutes. Cool completely in the pan.
  7. For frosting, melt butter and peanut butter in a saucepan until it starts to boil. Remove from heat and stir in milk.
  8. Gradually mix in powdered sugar until frosting is smooth.
  9. Pour warm frosting over cooled bars and spread evenly. Let it set at room temperature.

Notes

  • Ensure bars are fully cooled before frosting to maintain layer separation.
  • Natural peanut butter can be used but may affect texture.
  • Parchment paper helps with easy removal and clean edges.
  • Store bars in an airtight container at room temperature or refrigerate for longer shelf life.
