Great for sharing or enjoying on your own!
1/2 cup salted butter (softened)
1/2 cup creamy peanut butter (e.g., Jif or Skippy)
3/4 cup light brown sugar (packed)
1 1/2 cups all-purpose flour
1 teaspoon baking soda
2 large eggs
1 1/2 cups semi-sweet chocolate chips
1 teaspoon vanilla extract
Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
In a mixing bowl, beat the softened butter, peanut butter, and light brown sugar together until creamy and smooth.
Add the eggs and vanilla extract, and mix until fully incorporated.
In a separate bowl, whisk together the flour and baking soda, then gradually add this mixture to the wet ingredients, mixing until combined.
Fold in the chocolate chips.
Press half of the dough into the prepared baking pan, leaving some space to swirl in the peanut butter.
Spoon dollops of peanut butter on top of the dough and gently spread with a spatula (don’t fully spread it out).
Crumble the remaining dough over the peanut butter.
Bake for 24-28 minutes or until the edges are golden and the bars are slightly jiggly in the center.
Allow the bars to cool completely before slicing and serving.
Let the bars cool completely before cutting to prevent them from falling apart.
You can add chopped peanuts, or other nuts for an extra crunch.
To make them vegan, substitute plant-based butter and egg substitutes.
Feel free to swap semi-sweet chocolate chips with milk, dark, or white chocolate chips.
