Ingredients

1/2 cup salted butter (softened)

1/2 cup creamy peanut butter (e.g., Jif or Skippy)

3/4 cup light brown sugar (packed)

1 1/2 cups all-purpose flour

1 teaspoon baking soda

2 large eggs

1 1/2 cups semi-sweet chocolate chips

1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.

  • In a mixing bowl, beat the softened butter, peanut butter, and light brown sugar together until creamy and smooth.

  • Add the eggs and vanilla extract, and mix until fully incorporated.

  • In a separate bowl, whisk together the flour and baking soda, then gradually add this mixture to the wet ingredients, mixing until combined.

  • Fold in the chocolate chips.

  • Press half of the dough into the prepared baking pan, leaving some space to swirl in the peanut butter.

  • Spoon dollops of peanut butter on top of the dough and gently spread with a spatula (don’t fully spread it out).

  • Crumble the remaining dough over the peanut butter.

  • Bake for 24-28 minutes or until the edges are golden and the bars are slightly jiggly in the center.

  • Allow the bars to cool completely before slicing and serving.

Notes

  • Let the bars cool completely before cutting to prevent them from falling apart.

  • You can add chopped peanuts, or other nuts for an extra crunch.

  • To make them vegan, substitute plant-based butter and egg substitutes.

  • Feel free to swap semi-sweet chocolate chips with milk, dark, or white chocolate chips.
