These Peanut Butter Balls with Chocolate Rice Krispies are a crunchy, sweet treat that combines creamy peanut butter, crispy Rice Krispies, and smooth vegan chocolate. Ingredients

1 cup crunchy peanut butter (the chunkier, the better!)

6 tablespoons honey

1/8 teaspoon salt

3 cups Rice Krispies cereal

1 1/2 cups vegan chocolate chips

Instructions

  • Line a muffin pan with liners and lightly spray with non-stick spray.

  • In a saucepan over low heat, melt the peanut butter, honey, and salt. Stir until smooth and combined.

  • Remove from heat and mix in the Rice Krispies cereal until evenly coated.

  • Distribute the mixture into muffin pan liners, pressing down to shape.

  • In another saucepan, melt the vegan chocolate chips over low heat, stirring constantly.

  • Spoon the melted chocolate over each peanut butter ball, spreading evenly.

  • Refrigerate the muffin pan for about 30 minutes, until the balls are firm.

  • Once firm, remove the balls from the liners and enjoy!

  • For variations, you can add mini marshmallows, dried fruits, or crushed nuts to customize the balls.
