Crispy, savory, and easy to make, these oven roasted garlic cabbage steaks are the perfect healthy side or light main. Packed with flavor and simple ingredients, this low-carb, vegan, and gluten-free dish is ideal for meal prepping or quick weeknight dinners.

Ingredients

1 large green or red cabbage

3 tablespoons olive oil (or melted butter for richer flavor)

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon onion powder

½ teaspoon dried thyme

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

Optional toppings: grated Parmesan cheese, red pepper flakes, fresh parsley

Instructions

Oven Method:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment or lightly grease.

  2. Slice cabbage into ¾-inch thick “steaks,” keeping the core intact to hold them together.

  3. In a small bowl, mix olive oil, garlic powder, paprika, onion powder, thyme, salt, and pepper.

  4. Brush the mixture over both sides of each cabbage steak.

  5. Arrange steaks on the baking sheet with space between. Roast for 25–30 minutes, flipping halfway, until edges are crispy and golden.

  6. Garnish with Parmesan, red pepper flakes, or parsley, if desired. Serve warm.

Air Fryer Method:

  1. Preheat air fryer to 375°F (190°C).

  2. Slice and season cabbage as above.

  3. Place in a single layer in the air fryer basket. Air fry for 10–15 minutes, flipping halfway, until crisp and golden.

Notes

  • For extra crispiness, use the air fryer method and avoid overcrowding.

  • Red cabbage works just as well but will have a deeper flavor and a vibrant hue.

  • Add a balsamic glaze or honey mustard drizzle for extra depth.

  • Store leftovers in the fridge up to 3 days. Reheat in the oven or air fryer for best texture.

  • Try adding shredded cheese, fresh herbs, or cayenne pepper for variation.
