Oven roasted garlic cabbage steaks are a simple, healthy dish featuring tender, crispy cabbage slices seasoned with garlic, smoked paprika, and herbs. Perfect as a hearty side or light main, they deliver flavorful, golden edges and tender centers using either an oven or air fryer.

Ingredients

1 large green or red cabbage

3 tablespoons olive oil (or melted butter for a richer flavor)

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon onion powder

½ teaspoon dried thyme

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

Optional toppings: grated Parmesan cheese, red pepper flakes, or fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Remove any wilted or damaged outer leaves from cabbage. Slice cabbage into ¾-inch thick rounds, keeping the core intact.
  3. In a small bowl, mix olive oil, garlic powder, smoked paprika, onion powder, thyme, salt, and black pepper.
  4. Brush the seasoning mixture generously on both sides of each cabbage steak.
  5. Arrange cabbage steaks on the baking sheet in a single layer with space between them.
  6. Roast for 25–30 minutes, flipping halfway through, until edges are golden and crispy.
  7. Remove from oven and let cool slightly. Sprinkle optional toppings before serving.

  • Use firm, fresh cabbage heads for best results.
  • Adjust seasonings to taste or swap smoked paprika for curry powder or Cajun seasoning.
  • For richer flavor, use melted butter instead of olive oil.
