Ingredients

4-6 bone-in, skinless chicken thighs

1 ½ cups long-grain white rice

1 medium onion, chopped

3 cloves garlic, minced

2 tbsp butter

2 ½ cups chicken broth (hot)

1 cup water

1 tsp paprika

1 tsp thyme

Salt and pepper, to taste

Instructions

  • Preheat the Oven: Preheat to 350°F (175°C).

  • Prepare the Baking Dish: Spread chopped onion and minced garlic evenly in a 9x13-inch baking dish. Place butter in the center and bake for 12 minutes until onions are translucent.

  • Season the Chicken: While the onions are baking, combine paprika, thyme, salt, and pepper. Rub this seasoning mix onto the chicken thighs.

  • Combine Rice and Broth: Remove the baking dish from the oven. Add uncooked rice, stirring it into the onion and garlic mixture. Pour in the hot chicken broth and water, stirring to combine.

  • Arrange the Chicken: Place the seasoned chicken thighs on top of the rice mixture. Cover with aluminum foil.

  • Bake: Bake for 30 minutes, then remove the foil and continue baking for another 20-25 minutes or until chicken is cooked and rice is tender.

  • Rest and Serve: Let the dish rest for 5 minutes before serving. Garnish with fresh herbs if desired.
