Ingredients

1 lb smoked sausage, sliced

12 oz penne pasta

2 cups chicken broth

1 cup BBQ sauce

1/2 cup honey

1 cup corn kernels (fresh or frozen)

1 bell pepper, chopped

1 medium onion, chopped

2 tbsp olive oil

1 tsp garlic powder

Salt and pepper to taste

Chopped parsley (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the sliced sausage, chopped onion, and bell pepper. Cook for 5 to 7 minutes, until the vegetables soften and the sausage is browned.

  • Stir in garlic powder, salt, and pepper. Pour in chicken broth, BBQ sauce, and honey. Add the uncooked pasta and stir well.

  • Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.

  • Stir in corn kernels and cook for an additional 2-3 minutes. Taste and adjust seasoning if necessary.

  • Garnish with chopped parsley and serve warm.

Notes

  • You can swap smoked sausage for andouille for extra heat or chicken sausage for a lighter option.

  • Add mushrooms, zucchini, or spinach for extra veggies.

  • To spice it up, add red pepper flakes or a spicier BBQ sauce.

  • Increase honey for a sweeter taste or use a sugar substitute.
