1 lb smoked sausage, sliced
12 oz penne pasta
2 cups chicken broth
1 cup BBQ sauce
1/2 cup honey
1 cup corn kernels (fresh or frozen)
1 bell pepper, chopped
1 medium onion, chopped
2 tbsp olive oil
1 tsp garlic powder
Salt and pepper to taste
Chopped parsley (optional)
Heat olive oil in a large skillet over medium heat. Add the sliced sausage, chopped onion, and bell pepper. Cook for 5 to 7 minutes, until the vegetables soften and the sausage is browned.
Stir in garlic powder, salt, and pepper. Pour in chicken broth, BBQ sauce, and honey. Add the uncooked pasta and stir well.
Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Stir in corn kernels and cook for an additional 2-3 minutes. Taste and adjust seasoning if necessary.
Garnish with chopped parsley and serve warm.
You can swap smoked sausage for andouille for extra heat or chicken sausage for a lighter option.
Add mushrooms, zucchini, or spinach for extra veggies.
To spice it up, add red pepper flakes or a spicier BBQ sauce.
Increase honey for a sweeter taste or use a sugar substitute.
