This One-Skillet Smoky Cajun Sausage & Cheese Mac combines the bold flavors of smoked sausage, Cajun seasoning, and creamy cheeses in a quick and easy dish. Perfect for busy weeknights, this comforting meal is made in one pan and packed with smoky, spicy goodness. The melted cheddar and mozzarella create a rich and gooey sauce, while the pasta absorbs the flavors in every bite.

Ingredients

8 oz elbow macaroni

1 lb smoked sausage, sliced

1 small onion, diced

1 bell pepper, diced

3 cups chicken broth

1 cup heavy cream

1 tsp Cajun seasoning

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

2 tbsp olive oil

Salt and pepper to taste

Green onions (optional, for garnish)

Instructions

  • Sauté the Sausage & Vegetables: Heat olive oil in a large skillet over medium heat. Add sliced smoked sausage and cook for 3-4 minutes until browned. Add diced onion and bell pepper, cooking for 2-3 minutes until softened.

  • Cook the Pasta: Stir in elbow macaroni, chicken broth, heavy cream, Cajun seasoning, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 8-10 minutes until pasta is tender and has absorbed most of the liquid.

  • Add the Cheese: Remove from heat and stir in cheddar and mozzarella cheese until melted and creamy.

  • Serve & Garnish: Taste and adjust seasoning if needed. Serve hot, garnished with chopped green onions.

Notes

  • Variations: Add spinach, zucchini, or mushrooms for more veggies. Swap sausage for chicken or shrimp for a different twist. Adjust the spice level by reducing or increasing Cajun seasoning.
