Ingredients

  • 1 lb smoked sausage, sliced into rounds

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned, drained)
  • 1 cup bell peppers, diced (red, green, or yellow)
  • 1 onion, diced
  • 2 cups chicken or vegetable broth
  • ½ cup BBQ sauce (your choice – sweet, spicy, or smoky)

Seasonings and Garnish:

  • 1 tsp garlic powder
  • 1 tsp paprika (regular or smoked for extra depth)
  • Salt and pepper, to taste
  • Optional: Chopped green onions or parsley for garnish

Instructions

  • Brown the Sausage: Heat a large skillet over medium heat. Add the sliced sausage and cook for 3–4 minutes until lightly browned. Remove and set aside.
  • Sauté the Vegetables: In the same pan, cook the diced onion and bell peppers for 3–4 minutes, until softened.
  • Toast the Rice and Add Seasonings: Stir in the uncooked rice, garlic powder, paprika, salt, and pepper. Cook for about 1 minute to allow the rice to absorb the flavors.
  • Add Liquids and Other Ingredients: Pour in the broth and BBQ sauce, stirring well. Add the black beans and corn.
  • Simmer Until Cooked: Bring to a boil, then reduce to low heat. Cover and simmer for 20 minutes or until the rice is tender.
  • Stir in the Sausage & Serve: Add the cooked sausage back to the pan, stir, and let it sit for a few minutes before serving. Garnish with chopped green onions or parsley, if desired.
