Ingredients

1 lb smoked sausage, sliced into rounds

1 cup rice (uncooked, long-grain recommended)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned, drained)

1 cup bell peppers, diced (red, green, or yellow)

1 onion, diced

2 cups chicken or vegetable broth

½ cup BBQ sauce (your choice – sweet, spicy, or smoky)

1 tsp garlic powder

1 tsp paprika (regular or smoked for extra depth)

Salt and pepper, to taste

Optional: Chopped green onions or parsley for garnish

Instructions

  • Brown the Sausage: Heat a large skillet over medium heat. Add the sausage and cook for 3-4 minutes until lightly browned. Remove from the pan and set aside.

  • Sauté the Vegetables: In the same pan, add the diced onion and bell peppers. Cook for 3-4 minutes until softened.

  • Toast the Rice: Stir in the uncooked rice, garlic powder, paprika, salt, and pepper. Cook for about 1 minute.

  • Add Liquids and Other Ingredients: Pour in the broth and BBQ sauce, then add the black beans and corn. Stir everything together.

  • Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes or until the rice is tender and most of the liquid is absorbed.

  • Stir in the Sausage & Serve: Add the sausage back to the pan and stir gently. Let it sit for a few minutes before serving. Garnish with green onions or parsley, if desired.
