Ingredients

For the Salmon and Asparagus:

  • 2 lbs salmon fillet, cut into six 6 oz portions
  • 2 lbs asparagus, trimmed
  • Salt and black pepper, to taste
  • 1 Tbsp olive oil
  • 1 small lemon, sliced into rings for garnish

For the Lemon-Garlic-Herb Butter:

  • 6 Tbsp unsalted butter, softened
  • 2 Tbsp fresh lemon juice
  • 2 garlic cloves, pressed or minced
  • 2 Tbsp fresh parsley, finely chopped
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven and prepare the pan: Preheat your oven to 450°F (232°C). Line a large rimmed baking sheet with parchment paper, trimming any excess to prevent charring under the broiler.
  2. Arrange salmon and asparagus: Place the salmon fillets skin-side down on the baking sheet. Arrange the trimmed asparagus around the salmon. Drizzle the asparagus with olive oil and roll to coat. Season both the salmon and asparagus with salt and black pepper.
  3. Prepare the Lemon-Garlic-Herb Butter: In a medium bowl, mash together the softened butter, lemon juice, pressed garlic, chopped parsley, salt, and black pepper until well combined.
  4. Apply the butter: Spoon about three-quarters of the lemon-garlic-herb butter over the salmon, spreading it evenly. Dab the remaining butter over the asparagus.
  5. Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the salmon is flaky and cooked through.
  6. Broil for finish: Switch the oven to broil on high and broil for an additional 2-3 minutes for a golden-brown top on the salmon.
  7. Garnish and serve: Remove from the oven, garnish with lemon slices, and serve immediately.

Notes

  • Vegetable Alternatives: You can swap the asparagus for broccoli, green beans, or bell peppers, adjusting cooking times as needed.
  • Flavor Variations: Add a pinch of red pepper flakes for heat or a teaspoon of Dijon mustard for tang to the butter.
  • Storage/Reheating: Leftovers can be stored in the refrigerator for up to 2 days. Reheat in the oven at 300°F (149°C) or enjoy cold in a salad.
