Ingredients

4 boneless, skinless chicken breasts

1 cup long-grain white rice

2 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 small onion, finely chopped

3 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

  • Season the chicken with salt and pepper, then brown on both sides in a large skillet with olive oil. Remove and set aside.
