One-Pan Creamy Mushroom Chicken is a restaurant-style meal you can make right at home in under 40 minutes. With golden-seared chicken, tender mushrooms, and a rich cream sauce, this dish delivers elegance and heartiness in one skillet.

Ingredients

4 boneless, skinless chicken breasts or thighs

2 tablespoons olive oil

Salt and black pepper, to taste

2 tablespoons unsalted butter

1 small onion, thinly sliced

3 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini)

1 cup heavy cream

½ cup chicken broth

½ teaspoon dried thyme

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts or thighs with salt and black pepper, then add them to the skillet. Sear the chicken for about 6-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. In the same skillet, melt the butter over medium heat. Add the sliced onion and garlic, cooking until softened and aromatic, about 2 minutes.
  3. Add the sliced mushrooms and sauté until they are tender and browned, about 5 minutes.
  4. Pour in the chicken broth and stir in the heavy cream. Add the dried thyme and bring the mixture to a simmer. Let it cook for 2-3 minutes until the sauce thickens slightly.
  5. Return the chicken to the skillet, spooning some of the sauce over the top. If using, sprinkle the Parmesan cheese over the chicken and sauce. Allow the dish to simmer for another 5 minutes, or until the chicken is fully coated and the sauce is thick and creamy.
  6. Garnish with chopped fresh parsley before serving.

  • This dish is naturally gluten-free, but you can serve it with gluten-free sides like rice or mashed potatoes.
  • If you prefer a thicker sauce, simmer the sauce longer or add a slurry made from cornstarch and water.
  • For added flavor, you can splash some white wine into the skillet along with the chicken broth before adding the cream.
