This One-Pan Bold Honey BBQ Chicken Rice is a simple, flavorful dish featuring tender chicken, fragrant rice, and a sweet-tangy BBQ sauce. With minimal prep and cleanup, it’s perfect for busy weeknights. The honey BBQ sauce adds the right balance of sweetness and tang, making this meal a family favorite. Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 cup chicken broth
  • ½ cup BBQ sauce (your choice of flavor)
  • ¼ cup honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup frozen corn kernels
  • Fresh cilantro (optional, for garnish)

Instructions

  • Heat olive oil in a large, deep skillet over medium heat.
  • Season both sides of chicken breasts with garlic powder, smoked paprika, salt, and pepper. Once the skillet is hot, add the chicken and cook for 6-7 minutes per side until fully cooked and golden brown. Remove the chicken and set aside.
  • In the same skillet, add rice and cook for 1-2 minutes, stirring occasionally.
  • Pour in chicken broth, BBQ sauce, and honey. Stir to combine and bring the mixture to a simmer.
  • Add the chicken back into the skillet on top of the rice, and add frozen corn. Cover with a lid.
  • Lower the heat and cook for 15-20 minutes, or until rice is tender and has absorbed most of the liquid.
  • Remove the skillet from heat and let sit, covered, for 5 minutes. Slice chicken and stir into the rice.
  • Garnish with fresh cilantro and serve.

Notes

  • For a spicier dish, add cayenne pepper or diced jalapeños to the BBQ sauce.
  • For a vegetarian version, swap chicken with tofu or tempeh, or use more vegetables.
  • You can use different types of rice, such as brown rice or flavored rice.
