1 package strawberry gelatin
1/4 cup unsalted butter (melted)
8 oz cream cheese (softened)
1 container Cool Whip (8 oz)
2 cups graham cracker crumbs
1 cup powdered sugar
1-2 cups fresh strawberries (chopped)
Prepare the strawberry layer: Dissolve the strawberry gelatin in 1 cup of boiling water. Stir in 1 cup cold water and let it cool for 15 minutes. After cooling, fold in 1 container of Cool Whip. Refrigerate for 30 minutes to firm up.
Make the crust: Combine graham cracker crumbs and melted butter in a bowl. Press the mixture firmly into the bottom of a 13x9-inch baking dish. Freeze the crust for 15 minutes to set.
