No-Bake Strawberry Cheesecake Bars are a simple and elegant dessert with a graham cracker crust, strawberry-infused cheesecake filling, and a light whipped topping—perfect for warm days and make-ahead ease.

Ingredients

1 ½ cups graham cracker crumbs

6 tablespoons butter, melted

¼ cup granulated sugar

2 (8 oz) packages cream cheese, at room temperature

1 ¼ cups chopped strawberries

1 cup granulated sugar

1 teaspoon vanilla extract

1 cup Cool Whip, thawed

Additional fresh strawberries, for optional garnish

Instructions

  1. In a medium bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined.
  2. Press the crust mixture firmly into the bottom of an 8-inch square baking pan lined with parchment paper. Refrigerate for 1 hour to set.
  3. In a blender or food processor, blend chopped strawberries and 1 cup sugar until finely chopped.
  4. Add cream cheese and vanilla extract to the blender and blend until smooth and well combined.
  5. Transfer the mixture to a large mixing bowl and gently fold in the Cool Whip until fully incorporated.
  6. Pour the cheesecake filling over the chilled crust and spread evenly.
  7. Cover and refrigerate for at least 4 hours, or until set.
  8. Garnish with additional fresh strawberries if desired. Cut into bars and serve chilled.

Notes

Chill overnight for best results.

Use parchment paper for easier removal and clean slicing.

Frozen strawberries can be used if thawed and drained.

Homemade whipped cream can replace Cool Whip.
