This No Bake Eclair Cake is a delightful dessert combining layers of graham crackers, creamy vanilla pudding mixed with whipped topping, and a rich chocolate frosting. It captures the flavors of a chocolate eclair without the need for baking.

Ingredients

6.8 ounces vanilla instant pudding mix

3 cups milk

8 ounces whipped topping, thawed

16 ounces graham crackers

16 ounces chocolate frosting

Instructions

  1. In a large bowl, mix the vanilla instant pudding mix with milk until smooth.
  2. Fold in the thawed whipped topping until well combined.
  3. In a 9x13-inch baking dish, arrange a single layer of graham crackers to cover the bottom.
  4. Spread half of the pudding mixture over the graham crackers, smoothing it into an even layer.
  5. Add another layer of graham crackers over the pudding mixture.
  6. Spread the remaining pudding mixture over the second layer of graham crackers.
  7. Top with a final layer of graham crackers.
  8. Cover the dish with plastic wrap and refrigerate for at least 30 minutes.
  9. Remove the foil lid from the chocolate frosting container and microwave for 25 seconds to soften. Stir well.
  10. Pour the softened frosting over the top layer of graham crackers and spread evenly.
  11. Cover and refrigerate the cake for at least 6 hours, preferably overnight.
