Ingredients

8 ounces cream cheese

8 tablespoons unsalted butter (1 stick)

1 box yellow cake mix (15.25-ounce)

4 large eggs, divided

1 pound powdered sugar (about 4 cups)

1 teaspoon vanilla extract

Instructions

  1. Let the cream cheese sit at room temperature until softened, or soften it in the microwave in 15-second bursts until very soft.
  2. Preheat oven to 350°F and position a rack in the middle. Line a 9x13-inch baking pan with parchment paper, leaving overhang on the sides.
  3. Melt the butter in the microwave or on the stove and let it cool slightly.
  4. In a medium bowl, combine melted butter, yellow cake mix, and 2 eggs. Beat until smooth but thick (about 25 to 30 seconds). Spread this batter evenly into the prepared pan.
  5. Clean the mixing bowl (no need to wash), then add the cream cheese, remaining 2 eggs, powdered sugar, and vanilla extract. Beat until smooth and creamy, scraping the sides once or twice.
  6. Pour the cream cheese mixture over the cake batter and spread into an even layer.
  7. Bake for 35 to 40 minutes until edges are golden and the center is slightly jiggly. Cool completely on a wire rack (about 2 to 3 hours).
  8. Run a knife around the edges to loosen the bars, lift out using the parchment overhang, and cut into 24 squares.
