Ingredients
12 oz cheese tortellini (fresh or frozen)
20-25 pepperoni slices
1 1/2 cups pizza sauce
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tablespoon olive oil
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
Cook tortellini according to package instructions until al dente. Drain and set aside.
In a mixing bowl, combine cooked tortellini with pizza sauce, Italian seasoning, garlic powder, salt, and pepper. Stir well to coat.
Lightly grease a casserole dish with olive oil. Spread half of the tortellini mixture evenly in the dish.
Layer half of the shredded mozzarella and pepperoni slices over the tortellini.
Add the remaining tortellini mixture on top, followed by the rest of the mozzarella and pepperoni. Sprinkle with grated Parmesan cheese.
Cover casserole with foil and bake for 20 minutes.
Remove foil and bake an additional 10-15 minutes until cheese is melted and bubbly.
Let cool slightly before serving.
