Ingredients

2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1 cup applesauce (unsweetened or sweetened)

2 eggs

3/4 cup brown sugar

1/4 cup vegetable oil or melted butter

1 tsp vanilla extract

Optional add-ins: chopped nuts, raisins, or chocolate chips

Instructions

  • Preheat the oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease with cooking spray.

  • Combine dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  • Mix wet ingredients: In a separate bowl, whisk together the applesauce, eggs, brown sugar, oil, and vanilla extract.

  • Combine wet and dry ingredients: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Avoid overmixing.

  • Add optional mix-ins: If desired, fold in chopped nuts, raisins, or chocolate chips.

  • Fill the muffin tin: Divide the batter evenly among the muffin cups, filling each about two-thirds full.

  • Bake: Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.

  • Cool: Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a whole wheat version, replace half or all of the all-purpose flour with whole wheat flour.

  • For a vegan option, use a flaxseed egg (1 tbsp flaxseed meal + 2.5 tbsp water) and substitute butter with coconut oil.
