Celebrate St. Patrick's Day with these delicious Mint Oreo Parfaits! Layers of creamy mint filling, crunchy Oreo crumbs, and a festive green touch make this no-bake dessert perfect for any celebration. Easy to make and can be prepared in advance, it’s a sweet treat everyone will love.

Ingredients

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1/4 cup milk
  • 1/2 tsp mint extract
  • 8-10 Oreo cookies, crushed (for the base and topping)
  • Green food coloring (optional, for a festive touch)

Instructions

  1. In a large mixing bowl, beat the heavy whipping cream with 1/2 cup powdered sugar and vanilla extract until stiff peaks form. Set aside.
  2. In another bowl, beat the cream cheese with 1/2 cup powdered sugar until smooth.
  3. Add the milk, mint extract, and a few drops of green food coloring to the cream cheese mixture. Continue to beat until everything is well incorporated.
  4. Gently fold in the whipped cream mixture into the cream cheese mixture until smooth and creamy.
  5. In serving glasses or bowls, layer the mint cream mixture and crushed Oreos. Start with a layer of Oreo crumbs, then add a layer of mint cream. Repeat the layers, finishing with the cream mixture.
  6. Top with a sprinkle of crushed Oreos and, if desired, a few more drops of green food coloring.
  7. Refrigerate the parfaits for at least 1 hour to allow the layers to set before serving.

Notes

  • You can make these parfaits a day ahead and store them in the refrigerator.
  • Feel free to swap the Oreos for your favorite cookie.
  • To make this vegan, use dairy-free cream cheese and coconut cream instead of heavy whipping cream.
  • If you don’t have green food coloring, skip it! The parfaits will still taste amazing.
