Mexican White Trash Casserole is the ultimate cheesy, crunchy comfort food. Packed with layers of crushed nacho Doritos, seasoned meat, and melty cheese, this easy-to-make Tex-Mex casserole is perfect for weeknights, potlucks, or anytime you crave a hearty, crowd-pleasing dish.

Ingredients

1 bag Nacho Doritos, crushed

2 cups shredded chicken or ground beef

2 cups shredded cheese (cheddar and Monterey Jack blend recommended)

1 can (10.75 oz) cream of chicken soup

1 can Rotel tomatoes, undrained

½ cup sour cream

½ cup milk

½ package taco seasoning (or more, to taste)

Instructions

  • Preheat oven to 350°F (175°C). Lightly grease a 2-quart casserole dish.

  • In a bowl, mix chicken or beef, 1½ cups of cheese, soup, Rotel, sour cream, milk, and taco seasoning.

  • Spread half of crushed Doritos in the bottom of the dish. Layer with half the meat mixture.

  • Repeat with remaining Doritos and meat mixture.

  • Top with reserved cheese. Cover with foil and bake for 35 minutes.

  • Remove foil and bake 5–10 more minutes until bubbly and golden.

  • Let rest before serving. Optionally top with sour cream, avocado, or cilantro.

Notes

Add jalapeños or hot sauce for extra heat.

Swap protein: turkey, tofu, or beans work well.

Make it creamier with cream cheese.

Add veggies like corn or bell peppers.

Add fresh Doritos on top after baking for extra crunch.

Can be made ahead or frozen before baking.
