These Mexican Rotisserie Chicken Tostadas are a quick and flavorful meal featuring crispy corn tortillas layered with seasoned chicken, black beans, corn, salsa, and melted cheese. Ready in just 25 minutes, they are perfect for busy weeknights or casual gatherings.

Ingredients

8 corn tortillas (6-inch size)

1 tablespoon cooking oil

8.5 ounces canned corn (drained)

1 1/2 cups cooked chicken, shredded

8 ounces salsa (store-bought or homemade)

2 tablespoons taco seasoning mix

15 ounces black beans (rinsed and drained)

2 cups shredded colby jack cheese

Fresh cilantro leaves

Tomatoes, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly brush both sides of the corn tortillas with cooking oil and place them on a baking sheet in a single layer. Bake for 5–7 minutes per side, until golden and crispy. Remove and set aside.
  2. In a medium skillet over medium heat, combine the shredded chicken, salsa, and taco seasoning mix. Cook for about 5 minutes, stirring occasionally, until heated through and evenly coated.
  3. Heat the black beans in a small saucepan over medium heat or in a microwave-safe bowl until warmed through.
  4. Spread a layer of black beans over each crispy tortilla. Top with the seasoned chicken mixture and sprinkle evenly with drained corn.
  5. Add shredded colby jack cheese on top of each tostada. Return to the oven for 3–5 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and top with freshly chopped tomatoes and cilantro before serving.

Notes

  • Add sliced avocado, guacamole, sour cream, shredded lettuce, or sliced jalapeños for extra flavor.
  • Swap black beans for refried beans for a smoother base.
  • Use pepper jack cheese for a spicier version.
  • Store toppings and tortillas separately in airtight containers in the refrigerator for up to 3 days.
  • Reheat chicken and beans before assembling, and re-crisp tortillas in a 375°F oven if needed.
  • Freeze the chicken mixture separately for up to 2 months; do not freeze assembled tostadas.
