Infused with rosemary, thyme, and oregano, this simple yet elegant recipe is perfect for a special dinner or a weeknight meal. The dry white wine ensures the fish remains moist and tender, creating a delicious and juicy meal that everyone will love.

Ingredients

4 fillets Branzino (6 ounces each)

2 tbsp olive oil

4 cloves garlic, minced

1 lemon, thinly sliced

2 sprigs fresh rosemary

4 sprigs fresh thyme

1 sprig fresh oregano

Salt, to taste

Freshly ground black pepper, to taste

1/4 cup dry white wine

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the Branzino fillets on a baking sheet lined with parchment paper.

  3. Drizzle the olive oil over the fillets and rub it in evenly.

  4. Sprinkle minced garlic, salt, and pepper over the fish.

  5. Lay lemon slices on top of the fillets and tuck the rosemary, thyme, and oregano sprigs around the fish.

  6. Pour dry white wine around the fillets (but not directly on top of them).

  7. Bake for 20-25 minutes, or until the fish flakes easily with a fork and is opaque.

  8. Let the fish rest for a few minutes before serving.

Notes

  • For a crispy topping, mix breadcrumbs with herbs, lemon zest, and olive oil, then spread over the fillets before baking.

  • If you want a dramatic presentation, wrap the fish in parchment paper (en papillote) with herbs and lemon.

  • To add even more flavor, try stuffing a whole Branzino with garlic, lemon slices, and herbs.
