Meatball and Mashed Potato Bake is a comforting, hearty meal that combines savory meatballs, creamy mashed potatoes, and melted cheese into a perfect baked dish. It's ideal for weeknight dinners, potlucks, or as a make-ahead freezer meal.

Ingredients

1 lb frozen or homemade meatballs, fully cooked

4 cups mashed potatoes (freshly made or leftovers)

1 ½ cups brown gravy (homemade or store-bought)

1 cup shredded mozzarella or cheddar cheese

Salt and pepper to taste

Optional: chopped parsley or green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a greased baking dish, layer the fully cooked meatballs evenly at the bottom.
  3. Spread the mashed potatoes over the meatballs, smoothing them out to cover the meatballs completely.
  4. Pour the brown gravy over the mashed potatoes, ensuring it’s evenly distributed.
  5. Sprinkle the shredded mozzarella or cheddar cheese on top of the gravy.
  6. Season with salt and pepper to taste.
  7. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly, and the dish is heated through.
  8. Optional: Garnish with chopped parsley or green onions for a burst of color and freshness.

Notes

  • Feel free to add sautéed vegetables like onions, bell peppers, or spinach for extra flavor.
  • You can use different cheeses like provolone, gouda, or parmesan for variety.
  • If you like it spicy, add crushed red pepper flakes or hot sauce to the gravy.
  • Ground turkey or chicken meatballs are a great substitute if you prefer a lighter option.
  • Experiment with different types of gravy like mushroom or creamy white gravy for a twist.
  • Store leftovers in an airtight container for up to 3 days.
  • If you prefer a drier version, you can skip the gravy or substitute it with a creamy sauce or broth.
  • This dish can be frozen for up to 3 months. Just thaw and bake as directed.
