Matilda’s Chocolate Cake is a rich and moist chocolate cake that brings the perfect balance of sweetness and decadence. Inspired by the famous chocolate cake from the movie Matilda, this recipe features layers of fluffy, chocolatey goodness topped with a creamy, luscious frosting.

Ingredients

1 ¾ cups all-purpose flour

1 ½ teaspoons baking powder

¼ teaspoon baking soda

½ cup unsweetened cocoa powder

1 cup granulated sugar

2 large eggs

1 cup whole milk

½ cup vegetable oil

1 teaspoon vanilla extract

¾ cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a large bowl, sift together the flour, baking powder, baking soda, cocoa powder, and sugar.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until the batter is smooth.
  4. Slowly add the boiling water to the batter, mixing until it’s well combined. The batter will be thin, but that’s perfectly fine.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Notes

  • For frosting variations, try cream cheese frosting or a ganache topping instead of traditional buttercream.
  • For added flavor, you can mix in chocolate chips, chopped nuts, or even a little coffee.
  • Add orange zest or cinnamon for a unique twist on the flavor.
  • Store leftover cake in an airtight container at room temperature for up to 3 days or freeze it for up to 2 months.
  • Let the cake cool completely before frosting (about 1 hour).
