These Marshmallow Brownies are a delightful twist on the classic dessert, offering a rich, fudgy base topped with gooey marshmallows and finished with a luscious chocolate frosting. Perfect for any occasion, combining the best elements of brownies and s'mores into one irresistible treat.

Ingredients

1 (18-ounce) box brownie mix, plus ingredients specified on the box

2 cups mini marshmallows

1/2 cup unsalted butter

2 cups powdered sugar

1/4 cup unsweetened cocoa powder

2 tablespoons milk

1 teaspoon vanilla extract

Instructions

  1. Preheat your oven according to the instructions on the brownie mix box. Prepare the brownie batter as directed on the box.
  2. Pour the prepared brownie batter into a greased 9×9-inch baking pan. Bake for 30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  3. Remove the brownies from the oven and evenly sprinkle the mini marshmallows over the top. Return the pan to the oven and bake for an additional 3 minutes, or until the marshmallows have puffed up.
  4. While the marshmallows are baking, prepare the chocolate frosting by beating together the butter, powdered sugar, cocoa powder, milk, and vanilla extract until smooth and creamy.
  5. Once the marshmallows have puffed up, remove the brownies from the oven and let them cool for about 10 minutes. Spread the prepared chocolate frosting over the marshmallow layer.
  6. Allow the brownies to cool completely before slicing into squares. For cleaner cuts, use a plastic knife.

Notes

  • For a s'mores twist, add a layer of graham cracker crumbs between the brownie base and marshmallows.
  • Incorporate chopped nuts like walnuts or pecans into the batter for added texture.
  • Swirl peanut butter into the brownie batter before baking for a nutty flavor.
  • Add a few drops of mint extract to the frosting for a mint chocolate variation.
  • Store brownies in an airtight container at room temperature for up to 5 days.
  • Microwave individual servings for 10-15 seconds to reheat.
  • Use a plastic knife and clean it between cuts for clean slicing.
  • Can substitute store-bought chocolate frosting or ganache if desired.
  • Use gluten-free brownie mix and ingredients for a gluten-free version.
  • Adjust baking time if using a different pan size.
