For the Salmon:
4 salmon fillets (6 oz each, skinless or with skin)
2 Tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
Salt & pepper to taste
For the Sauce:
2 Tbsp unsalted butter
3–4 garlic cloves, minced
1 cup heavy cream
1/3 cup chicken broth (or vegetable broth)
1/2 cup grated Parmesan cheese
1/2 tsp chili flakes (optional, for heat)
1/2 cup sun-dried tomatoes, chopped
1 tsp dried basil (or Italian seasoning)
1/2 cup fresh spinach, chopped
Salt & pepper to taste
Prep the Salmon: Pat salmon fillets dry with a paper towel and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
Cook the Salmon: Heat olive oil in a large skillet over medium heat. Sear the salmon for 3–4 minutes per side until golden brown. Remove from skillet and set aside.
Make the Sauce: In the same skillet, melt butter over medium heat. Sauté garlic for 1 minute. Stir in heavy cream, chicken broth, and Parmesan. Mix until the cheese melts and the sauce thickens.
Add Flavor: Stir in chili flakes (if using), sun-dried tomatoes, and dried basil. Let the sauce simmer for 2–3 minutes.
Combine & Finish: Add spinach and stir until wilted. Return salmon to the skillet and spoon sauce over fillets. Simmer for 2 minutes.
Serve: Garnish with fresh basil or parsley, and serve with rice, mashed potatoes, or pasta.
For a spicy kick, increase the chili flakes or add cayenne pepper.
Use tofu or tempeh for a vegetarian version. Alternatively, serve the sauce with pasta.
Substitute spinach with kale or arugula for a different flavor.
