Manicotti is a classic Italian comfort dish featuring large pasta tubes stuffed with a rich cheese filling, baked in marinara sauce, and topped with melted cheese. This hearty and flavorful meal is perfect for family dinners, special occasions, or any time you're craving an authentic Italian meal.

Ingredients

  • 5 ½ ounces manicotti pasta
  • 1 part-skim ricotta cheese
  • 8 ounces shredded mozzarella cheese
  • ¾ cup grated Parmesan cheese, divided
  • 2 large eggs
  • 1 teaspoon dried parsley
  • Salt and ground black pepper to taste
  • 1 (16 ounce) jar spaghetti sauce

Instructions

  • Cook the pasta: Boil the manicotti shells in water until al dente, about 10-12 minutes. Drain and rinse under cold water to prevent sticking.
  • Preheat the oven: Set it to 350°F (175°C).
  • Prepare the filling: In a large bowl, mix together ricotta, mozzarella, ½ cup of Parmesan, eggs, parsley, salt, and pepper until well combined.
  • Assemble the dish: Spread ½ cup of spaghetti sauce on the bottom of a 9x13-inch baking dish. Stuff each manicotti shell with about 3 tablespoons of the cheese mixture and place them in the dish.
  • Top with sauce: Pour the remaining spaghetti sauce over the stuffed shells and sprinkle with the remaining ¼ cup of Parmesan.
  • Bake: Cover with aluminum foil and bake for about 45 minutes, until bubbly.

Notes

  • Spinach and Cheese Manicotti: Add 1 cup of cooked, chopped spinach to the cheese filling.
  • Meat-Filled Manicotti: Add cooked ground beef or Italian sausage to the cheese filling.
  • Freezing: Assemble the manicotti and freeze before baking for up to 3 months. Thaw overnight in the fridge before baking.
