Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Green and gold sprinkles (optional, for decoration)

Instructions

  • Prepare the Dough: In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Mix Together: Gradually add the dry ingredients to the butter-sugar mixture, mixing until a dough forms.
  • Chill the Dough: Divide the dough into two equal portions, wrap each in plastic wrap, and refrigerate for at least 1 hour.
  • Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  • Roll Out the Dough: On a lightly floured surface, roll out one portion of the chilled dough to about 1/8-inch thickness.
  • Cut Shapes: Using a leprechaun-shaped cookie cutter, cut out shapes and place them on the prepared baking sheets.
  • Bake: Bake for 8-10 minutes, or until the edges are lightly golden.
  • Cool: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
  • Decorate: Once cooled, decorate the cookies with green and gold sprinkles if desired.
