This Lucky Charms Leprechaun Hat Cake is a festive, fun-filled dessert perfect for St. Patrick's Day or any celebration. With a colorful rainbow cake and a whimsical cereal treat topping shaped like a leprechaun's hat, this treat is both delightful to make and enjoy!

Ingredients

Cereal Treats

  • 1/4 cup unsalted butter
  • 1 bag (10 oz) large marshmallows
  • 6 cups Lucky Charms™ cereal

Cake

  • 2 boxes Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 2 cups water
  • 1 cup vegetable oil
  • 6 eggs
  • Red, orange, yellow, green, blue, and violet food coloring

Decoration

  • 2 1/2 tubs (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • 1 container Betty Crocker™ chocolate decorating cupcake icing
  • 5 pretzel sticks

Instructions

Prepare Cereal Treats:

  1. Line a 10-inch round cake pan with plastic wrap and lightly coat with cooking spray.
  2. In a large stockpot, melt the butter over low heat. Add the marshmallows and stir until melted.
  3. Mix in the Lucky Charms cereal and press the mixture into the prepared pan. Refrigerate for 2 hours until solid.

Bake the Cake:

  1. Preheat the oven to 350°F and prepare two 8-inch round cake pans by spraying them with cooking spray and lightly flouring them.
  2. In a large bowl, combine the cake mix, water, oil, and eggs. Beat on low speed until smooth, then beat on medium speed to ensure there are no streaks.

Color the Batter:

  1. Divide the batter into six bowls, adding a different food coloring to each one.
  2. Layer the colored batters in the prepared pans, creating a rainbow effect.

Bake and Cool:

  1. Bake the cakes according to the instructions on the cake mix box. Let them cool for 10 minutes before removing from pans.

Assemble the Cake:

  1. Stack the cooled cake layers, spreading frosting between each layer.
  2. Top the cake with the prepared Lucky Charms cereal treats.
  3. Use chocolate icing and pretzel sticks to create the "leprechaun hat" shape.

Notes
